A compact spin on a childhood favorite: puppy chow!
Ingredients:
Truffle Filling:
3 cups Chex cereal
1 cup nut butter of choice (we used peanut butter)
1/4 cup + 1 tbsp powdered sugar
1 tsp Vanilla Extract
For Chocolate Layer:
2 cups Chocolate, dark or milk (for melting)
For Powdered Sugar Layer:
1/4 cup powdered sugar
What You Do:
Pour the Chex cereal into a medium mixing bowl. Mash the cereal until you have crumbs instead of full pieces. You can get the same result by adding the cereal to a Ziploc bag and crushing it with a rolling pin!
Add powdered sugar, nut butter, and vanilla extract to cereal crumbs. Mix until combined. *Pro Tip: Lightly coat your hands in a thin layer of butter and use your hands to thoroughly mix the ingredients. You’ll be getting your hands sticky in the next step, anyway!*
Use hands to make 1.5 inch balls out of the mixture. Place the little balls on a parchment-lined baking sheet and store in fridge during next steps.
In a microwave-safe bowl, melt your chocolate of choice in 30-second increments, stirring in between microwave sessions. *Pro Tip: To achieve a more silky consistency, add 1 tsp of coco- nut oil before putting back in microwave!*
Take the truffle balls out of the fridge and use a fork to dip each ball in the melted chocolate. Return chocolate-covered balls to baking sheet and store in fridge for at least 30 minutes until chocolate is cooled and hardened.
In a separate bowl, pour powdered sugar. Once your chocolate-covered truffles are ready, roll them in the bowl of powdered sugar until the truffle is completely covered.
Plate and enjoy!
